Busy bites is all about fun and healthy food for people who like to cook but are short on time.  My cooking style is usually fusion.  Most recipes are not “authentic” world cuisine as I like to play with different flavours, ingredients and methods, being inspired by recipes from all around the world rather than sticking to one type.  I also try to make them easier to cook when you don’t have excess time and energy.

I am not a nutritionist but generally try to cook meals that are high in fruit and vegetables, slow release carbohydrates and lean proteins while being low in saturated fats and sugar.  I also love vegetarian and vegan food so have quite a few recipes that are suitable for these diets. Also, most of my recipes are dairy-free as I am slightly lactose intolerant. I always love a challenge so if you want more recipes to suit a particular kind of diet just let me know!

My recipes are designed so that you can do most of the work when you have a bit of time (e.g. at the weekend) then put it together quickly when you get home from work and don’t have much time or energy but want a nice meal.  Each recipe comes with prep ahead tips which can be done up to 6 days ahead unless otherwise stated.  Most recipes will feed 2-4 people depending on how big their appetites are (they usually feed my husband and me with a generous leftover portion which he takes for lunch the next day).  New recipes will be posted at the weekend.
