Cooking fun and healthy meals when you’re short on time

My dad started to teach me to cook when I was a teenager. I immediately fell in love with the combination of science, creativity, taste, smell and colour as well as the health benefits of being able to cook fresh, nutritious food.  I quickly started to experiment with creating my own recipes. When I recently got a job which has a long commute I thought i would have to give up cooking. I actually found that,  by planning ahead and doing most of the preparation at weekends, I could continue to enjoy experimenting with new recipes and have healthy homecooked meals throughout the week. I know there are a lot of other busy, health conscious people out there who like to make and eat nutritious, easy homecooked food but have limited time in the week so I wanted to share these recipes….Happy cooking and eating 🙂 xo
